Uncle Matt
Why Uncle Matt’s? Padhraig’s uncle Matt lived and worked on this farm all his life. Padhraig’s father died when he was six years of age and Matt became like a father to Padhraig and his siblings. Many happy summer days were spent with Uncle Matt on the farm, he was a kind quiet gentleman and Padhraig believes and feels that the farm still holds his lovely presence.

Over 20 different vegetables are grown including Padhraig’s famous Mixed Leaves, potatoes, onion, cabbage, kale, broccoli, carrots, beetroot, leeks, brussel sprouts, courgette, tomatoes, cucumber, peppers, butternut squash, runner beans, spinach, cauliflower, basil, rhubarb, fruit – raspberries, worcesterberry, tayberry, sylvan berry, gooseberry, blackcurrant, redcurrants and apples. They also have eggs, jams, relishes, and chutneys all made from produce on the farm

Padhraig decided to turn his hobby and love of growing into a business and in 2010 he completed a year long training course in organic horticulture with Jim Cronin in Co. Clare . He is passionate about growing and believes that the care and respect shown from the sowing of the seed to the harvesting of the crop is present in the energy, and taste of the food.

Padhraig believes that for optimum health of plant and human we need to work using traditional farming methods ie. chemical free, farmyard manures and good crop rotation. Padhraig is a trained Biodynamic psychotherapist and believes that contact with nature is essential for mental health and general wellbeing. In 2011 the business had a glut of beetroot, courgettes, carrots and fruits – Catriona decided to make preserves and jams as this gave it another use for its produce – it also gave shelf life to the products and opened up new markets, the reaction has been fantastic.

Catriona works as a yoga teacher and an accounts technician and has a love and passion for food… and alongside Padhraig and some wonderful helpers keep the business running smoothly and progressing forward.

At present Uncle Matt’s produce is on sale in Centra Oughterard, McGeoughs Oughterard, Supervalue Moycullen, MacCambridges in Galway, Ernies on Sea Road, Galway , Morton’s Fine Foods in Lower Salthill, Joyces Knocknacarra Galway and Supervalue Barna.
